Ingredients

  • 1/2 cup cooked white rice
  • 1/2 cup cooked quinoa
  • 1/4 cup of diced tomatoes
  • 1/4 cup of cucumbers, peeled and diced
  • 2 1/2 tablespoons of vegenaise
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 avocado, sliced

Instructions

Mix in a bowl. Refrigerate for 2 hours. Served chilled.
