- 1/2 cup cooked white rice
- 1/2 cup cooked quinoa
- 1/4 cup of diced tomatoes
- 1/4 cup of cucumbers, peeled and diced
- 2 1/2 tablespoons of vegenaise
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 avocado, sliced
Instructions
Mix in a bowl. Refrigerate for 2 hours. Served chilled.
