6 slices of Bread (Ciabatta bread or firm bread, sliced about ¾-inch thick)
1 cup Almond Milk (Silk Almond Original Flavor)
1 tablespoon maple syrup
1 teaspoon of pure vanilla extract
2 tablespoons flour (unbleached all purpose flour)
1 tablespoon nutritional yeast
1 teaspoon cinnamon
1/2 teaspoon freshly ground nutmeg
Pinch of salt
2 teaspoons of coconut oil for the pan
1 tsp Vegan butter (Earth Balance)
Fresh fruit (4 Strawberries Sliced and 1/2 cup of blueberries)
1/8 cup maple syrup
1 tsp powdered sugar
In a small bowl, add almond milk, maple syrup, vanilla extract, flour, nutritional yeast, cinnamon, nutmeg and salt.
Transfer to shallow dish and dip bread into mixture making sure to coat entire piece of bread.
Heat coconut oil in large pan on low-medium heat. When the pan is hot, add the bread slices and cook for a few minutes per side, until golden brown.
Serve with powdered sugar, vegan butter, maple syrup, and fresh fruit.
