Looking for a healthy vegan snack? This recipe made from RAW ingredients and it actually tastes great!

I’m not a huge date fan, but this mixture is SO good. And, it’s good for you!

Vegan Healthy Snack: Coconut Pecan Balls

Ingredients

1 cup of raw unsalted pecans

3 tablespoons of unsweetened shredded coconut

1 tablespoon dried cranberries

12 pitted dates

1/4 cup of water 

Instructions

Add pecans, dates, cranberries, and 1 tablespoon of shredded coconut into a chopper (We use our Ninja Blender). Blend until it sticks together.

Note* If dough is not sticking together, you can add more dates.

Scoop out 1 tablespoon at a time and roll dough into a ball.

Briefly dunk ball in 1/4 cup of water to get wet. (This helps the coconut stick)

Roll ball around in the remaining 2 tablespoons of shredded coconut.

Place balls into the fridge for an hour.

Makes 10 Coconut Pecan Balls
